Cauliflower and Bacon Soup

With the cooler weather here soups are on the menu at our place.  Hubby isn't a fan of soup with soggy vegetables, so we usually have a lot of pumpkin or chicken noodle soup.  Given that are no soggy vegetables in this one I thought it was worth a go.

This is the first time I had ever made this type of soup but I had tried it at a friends and had to try and make it myself.  They said it was easy - liquid stock and cauliflower so I thought I would give it a go and see what we ended with - and we got a beautiful smooth and creamy soup.



Ingredients:
4 rashes of bacon
1 large onion
1 extra large cauliflower
1-2 litres of liquid stock
1 cup of skim milk
3/4 cup of cream
Parmesan cheese

Method:
Saute bacon and onion in large saucepan.
Add one litre of stock and one extra large cauliflower chopped.
Simmer until cauliflower is soft.
Add milk and cream
Using a stick mixer blend until a smooth consistency is achieved.
Add more stock as required.
Top with shaved Parmesan cheese and serve.

We also enjoyed our soup with delicious crusty garlic bread.  Just perfect for those cold nights!

And yes Hubby did like it. Yeah another soup on our list we can have.
