Apricot Slice (unbaked)

This recipe comes from my grandmother (on my fathers side) and is one of the few that I have from her.  I loved this slice as a child, it was a regular at family get together.  Now as an adult I know why it was a regular - it is so super quick and easy to make.  Perfect if you have to put together a plate for an event quickly.  As an alternative to the slice this can also be made into truffles which I often do at Christmas. 


125g butter
1/2 cup brown sugar
1/2 cup dried apricots chopped
220g (1/2 tin) condensed milk  (more as required)
1 pkt (250g) Milk Coffee or Milk Arrowroot Biscuits, crushed finely

1.  Melt butter, sugar and condensed milk over low heat.
2.  Add apricots and biscuit crumbs, mix well.
3. Press into greased slice tin and sprinkle top with coconut.

This recipe will continue to be a family favourite and I hope you find it as delicious as I do.
